White nougat is a cooked paste containing Provencal almonds, French lavender honey and whipped egg whites. The mix is cooked in traditional cauldrons.
In order to produce this authentic kind of nougat, years of know-how are required, as well as the accurate skills of a nougat master confectioner. White nougat is an iconic product for the André Boyer company, and a must among the 13 desserts from the Provence’s Christmas tradition.
